I got such a great response from my last blog post about losing 52 pounds in 52 weeks. I wanted to firstly thank you all for being so lovely. It gave me such a boost and knowing that I can help motivate someone else is really important to me. I thought I was destined to be overweight and if I can do it anyone can.
I thought it might be a nice idea to start a little Slimming World series on the blog. A monthly update filling you in on things that help keep me on track. Things that motivate me and stop me from throwing the towel in or returning to the days of comfort eating.
I hope this will help some of you. It might give you a few ideas if nothing else. As always if you have any questions just shout and I’ll happily answer them in the comments.
Mayflower Curry Sauce – If you haven’t tried this one yet I highly recommend it. It used to be only available in certain butchers but now Dunnes are selling it too. It’s actually on sale for €2 at the moment so it’s a good time to pick it up. Each packet contains 8 portions and one portion is 4 syns. It roughly works out at 4 syns per every 28g. 1/4 of the packet is 62.5g so I usually make that for myself and the other half and just give him slightly more than me to be safe.
Our Nespresso Machine – This is a new addition to the house and I am chuffed with it. I have wanted one for the longest time and we finally got one last month. It was on sale in a package for €133 which included the machine, the Aerochinno Milk Frother and 150 Pods. It was also free delivery and arrived within 48 hours. Great service. A latte can set you back something in the region of 5-12 Syns if you get one out and about. These days I have my latte at home where I know for sure how much milk I am using and don’t have to worry about all those sneaky syns adding up. The great thing about Nespresso is that Skimmed Milk actually froths much better than full fat so you get a lot of frothed milk from a small amount of your Healthy Extra A. Suits me well as I like to keep half of that allowance for cheese most days.
Warm Salads – People often say salads are boring but I couldn’t disagree more. A fried egg done in Fry Light or some boiled Asparagus with salt/pepper really takes it up a notch. I use the Aldi light dressing which work out at about .5-1 syn for a tablespoon depending on the flavour. The honey-mustard one is lovely and a little goes a long way.
Using Syns On Things Other Than Treats – I find this one works really well mid-week when I fancy something bold for lunch but don’t want to veer off plan either. On this particular day I used 3 syns for a couple of my favourite crisps and two syns for some light coleslaw. It made for a really delicious and filling lunch that tasted like a treat.
Syn Free Egg Muffins – Also known as Mini Quiche. These are so handy for when I’m out and about and want to have something tasty and filling with me. Last week I went to two Christmas Press Days where there were cakes, finger food and Champagne on offer. I had a couple of these on the bus before I went in and I felt full up before I went in. They couldn’t be easier to make too. I use little silicone muffin tins and layer them up with vegetables and ham. Then I top with my egg mixture which is just two eggs, salt, pepper and some Italian seasoning. Then I bake for 20 minutes in the oven. They are lovely hot or cold and really fill you up.
Sweet Omelettes – They call them Fromelettes in my Slimming World Group. A mix between an omelette and a pancake but with the flavours of French Toast. Whisk together two eggs, a drop of vanilla essence, pinch of cinnamon and some sweetener. Fry on a non-stick pan with some Fry Light and serve with fruit and yoghurt. I used one syn of honey in the photo below. Feels like having a pancake and it’s a really filling breakfast idea without using any Healthy Extras.
Alpen Lights – Or low syn bars in general. I always pick up a box of Slimming World Bars at my group but if I run out these are a great option. You get two of these as your Healthy Extra B or they work out at three syns each. If I am going to a play date or a friends house I take one with me so I am not tempted by cake or biscuits. They are lovely with a cup of tea or coffee and satisfy any sweet cravings.
Trying New Recipes – This week’s recipe was Aubergine Parmigiana and I made it with less cheese to be Slimming World friendly. I’ve made a vow to try a new recipe every week and I’ll post about that little project soon. It’s important to mix things up and keep your menu exciting so you don’t get bored. I highly recommend this recipe.
Finding New Branded Items – These are my current favourites and I got them all in Dunnes Stores. Pictured below are ice pops that work out at just 2.5 syns. They are like little Twisters and are less than €1.50 for the full packet. I’ve spoken about the High Fibre Brownies before. 4.5 syns but feels like a really bold chocolate fix. They are quite small but very chocolatey and lovely for a treat. They are currently on sale for €1.99 in Dunnes too. Finally, that is the new Healthy Extra B bread. It’s lovely. Very similar to Mc Ambridges. The slices are quite small but they are lovely if you toast them and serve as a layered sandwich like I did above in the photo with the crisps and coleslaw that I used my syns on.
And Finally, A Take Away – The promise of a weekend Take Away is what keeps me going during the week. I love not cooking on a Friday night and getting a take-away when the little fella goes to bed. Sometimes it’s an on-plan Chicken in Blackbean sauce and other times it’s a very off-plan Spice Bag or Pizza. It’s all about balance and I find that having a treat to look forward to really keeps me on plan during the week as I have something to look forward to.
